Yummmm Pup Cake

Happy 1st Birthday to Ellie!!!


Jeff got her a Peanut Butter Frosting Pup Cake from Three Dog Bakery here in Memphis and Ellie loved It! Let me tell you it looked real- Jeff and I were both salivating wishing we had one for ourselves :)

April Already



I can't believe it is already April. Where have these past months gone??

- Hello Spring!!






A few weeks ago Jeff and I headed down to the Laughing Place for the opening weekend of Turkey Hunting. He went out with dad touring the land calling for turkeys. Mom and I thought for sure they would come back with one since they were gone so long and considering the luck we had. While the boys were out we took a casual stroll down to the dock when we saw this in the tree above us...

It was a hen but still- we saw more than them :)

All in all it was a great weekend! Perfect weather for sitting on the porch, taking the dogs swimming, and hanging out in the hammock.

Jeff was reading Garden and Gun and noticed a great article and recipe on Drunken Pie. He insisted that I make it for the weekend. After reviewing the recipe, I made a few modifications by using our traditional Pecan Pie recipe, (from Renfroe Pecan Company) simply because it called for less sugar, and adding the bourbon. I personally think that Pecan pies are really sweet, but love the Renfroe Grand Champion Pecan Pie recipe.
It turned out great! The bourbon cuts some of the sweetness and really stands out. It was so good in fact that we are going to make it again for Easter!!

Bourbon Pecan Pie


3 eggs, slightly beaten
1 cup light Karo syrup
1 cup sugar
2 tablespoons melted butter or margarine
1 teaspoon vanilla flavoring
1 ½ cups chopped Pecans
2- 2 1/2 tablespoons bourbon

Mix all ingredients. Blend well. Pour into unbaked 9" pastry shell. Bake 350° for 50-55 minutes or until set in center.

2010 Recap

2o1o was a great year and before I look forward to 2011 I want to recap on what all 2010 had to offer.

Jeff and I got engaged in 2009 so 2010 was off to a great start with an engagement party in January

A Dogs Life

Here is a little update on our precious Ellie!

My mom came in town last week which was soo helpful for Ellie's transition to her new home. While we were at work, mom stayed home with the little girl. Having mom here was crucial in Ellie's "house breaking". In less than a week Ellie was house broken and sleeping through the night!

Mom was also helpful in taking our family photo- Haha

It's a little hard to see, but he got her a University of Arkansas collar. I couldn't believe it- once I saw it I ran out to College Station and got her an Alabama jersey

Ellie


Ellie has officially joined the family!!



We ended up getting the Black lab that had the lime ribbon. We picked her up yesterday and had one simi sleepless night- at least for Jeff. He kept getting up at every noise she made thinking she had to go out. He had the Friday off from work (or so he thought- he had to go in after lunch) and I took the afternoon off. Since I had to go to the work in the morning, he offered to take her out in the middle of the night. Having never had a puppy before (either of us) he woke up to every sound thinking it was her letting us know she had to go to the bathroom. Live and learn- I don't think he will do that again. She woke us up around 5 o'clock when she really had to go out with a much louder moan.


She was timid when we first brought her back, but has since gotten over any fears she once had. She has burst of energy and then is out for about 2-3 hours.

Puppy Update

On Sunday we were able to stop by and see our future puppy again. In the past pictures I posted, they were only 2.5 weeks old. Since then we have stopped by twice to see how they have grown - And they sure have grown!

Below are some pics at 3.5 weeks old. The active one's this week were the black with the red ribbon and the yellow with the pink ribbon.

Here are some at 4 weeks old. We weren't able to stop by and see them this week. These pictures are some that Pam posted on her website.




As you can see they were just starting to get curious!


Below are the most recent pictures taken on Sunday. They are 5.5 weeks old and were a lot more active and playful. The black with the yellow ribbon and the black with the lime ribbon were the most active.




In a little over two weeks we will be able to take her home!
