Fall Inspiration

Although it is unusually warm in Memphis I can still tell Fall is here. Jeff just cleaned the leaves off our patio but I would have never known if I didn't witness it myself. The leaves are changing their color and falling fast. Can you believe that October is almost over? Where has this month gone.

Laughing Place

This past weekend we went down to the "Laughing Place" and let me tell you, it really lived up to it's name.

Fun Appetizer

In my last post I mentioned that I made grilled artichokes for an appetizer. I may be biased, but I thought they were really good! They had tons of flavor without having to dip them in sauce - even though I did on a few.

It was fairly easy to make - Just make sure you provide enough time for them to cook thoroughly.




Ingredients

  • 2 large artichokes
  • 1 lemon, quartered
  • 3/4 cup olive oil
  • 4 cloves garlic, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Directions

  1. Fill a large bowl with cold water. Squeeze the juice from one lemon wedge into the water. Trim the tops from the artichokes, then cut in half lengthwise, and place halves into the bowl of lemon water to prevent them from turning brown.
  2. Bring a large pot of water to a boil. Meanwhile, preheat an outdoor grill for medium-high heat.
  3. Add artichokes to boiling water, and cook for about 15 minutes. Drain. Squeeze the remaining lemon wedges into a medium bowl. Stir in the olive oil and garlic, and season with salt and pepper.
  4. Brush the artichokes with a coating of the garlic dip, and place them on the preheated grill. Grill the artichokes for 5 to 10 minutes, basting with dip and turning frequently, until the tips are a little charred. Serve immediately with the remaining dip.


Final Product!


If you have never had an Artichoke I suggest trying one. They are very tasty and fun to eat.

Weekend Fun

I know it has been forever since I have blogged
and for my few followers I am soo sorry :)


My sister, Anne, came to visit us a few weekends ago and we had such a great time!!


She arrived Friday night and brought her golden retriever Piper. This was the first time Piper and Ellie met and they are now best of friends!!

After the drive and a long work week we decided to unwind with cocktails!
Vodka soda with lime for Anne and I - Beer for Jeff!

I decided to do something different for an appetizer. Jeff and I normally just set out some good cheeses with crackers, but we were making Pizza for dinner so I figured we were getting enough cheese and bread there. Thinking about something that would be tasty yet not too filling I opted for Grilled Artichokes. This is the first time I had made them and I thought they were great! Recipe to follow.

We made three different kinds: BBQ Chicken, Traditional with a twist, and Tomato Basil
They were great! We picked up Pizza dough at Whole Foods and added the toppings ourselves.
It was such a fun and casual dinner!

Tomato Basil: olive oil, sliced tomatoes, lots of basil, pine nuts, salt and pepper, parmesan and mozzarella cheese



Traditional with a twist: Pizza sauce, prosciutto, sauteed red onions, mushrooms, and mozzarella cheese



BBQ Chicken: BBQ sauce, rotisserie chicken cut in pieces, sauteed red onions, and red pepper for a kick!




I was so proud of myself for remembering to wear my cute aprons! I passed them out to everyone!

We put one in the oven and the other on the grill- Both turned out well!
